I hate seeing tomatoes go to waste, so I pick all of our tomatoes before the first frost. Even the green tomatoes. Here is an oven fried green tomatoes recipe that allows you to skip the hot oil mess of deep frying your tomato slices.

Easy Oven-Fried Green Tomatoes Recipe on plate with horseradish sauce

Fried green tomatoes are a gardener’s staple recipe whether you are so anxious for homegrown tomatoes that you pick them early or you are trying to use up the last of your green tomatoes before the first freeze. But I hate the mess of cleaning up after fried foods and will cheat whenever I can and make an oven-baked version instead. The result is less mess AND a healthy fried green tomatoes recipe.

This fried green tomatoes recipe is naturally gluten-free since it uses almond flour instead of all-purpose flour. You can make almond flour yourself by grinding almonds in a food processor or blender. When the almond flour is baked it releases the natural oils giving these baked green tomatoes more of a crunchy texture.

Oven Fried Green Tomatoes Recipe

Ingredients:
  • 3 medium green tomatoes sliced about 1/4″ thick
  • 1 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • dash of salt
  • dash of pepper

Horseradish Sauce Ingredients:

  • 1/4 cup mayonnaise
  • 2 tablespoons prepared horseradish

Step by step directions on how to make fried green tomatoes by baking them in the oven.

Directions:
  1. Preheat the oven to 350 degrees and line a large baking sheet with parchment paper.
  2. Combine the almond flour, onion powder, and garlic powder in a medium bowl and set aside.
  3. Whisk both eggs in a separate bowl and set aside.
  4. Dip one tomato slice at a time in the egg and then in the almond flour mixture. Flip to coat both sides.
  5. Place the tomato slice on the baking sheet and repeat with the remaining tomato slices.
  6. Sprinkle salt and pepper over the tomato slices.
  7. Bake for 30-35 minutes, flipping them over about halfway through.
  8. While the tomato slices are baking, make the horsey sauce by combining the mayonnaise and prepared horseradish.
  9. Remove the fried green tomatoes from the oven and serve with the horsey sauce.

I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
