Roasted Pear Cheesecake with Graham Cracker & Oatmeal Crumble- Enjoy this delicious no-bake cheesecake recipe with roasted pear and a light crunchy topping.

Do you like cheesecake? I do, too! When life is too hectic to pull off a full blown New York style baked cheesecake there is nothing wrong with a quick and easy no-bake recipe. That’s why no-bake cheesecake is so popular, because you can achieve velvety cheesecake bliss in a fraction of the time.

With this cheesecake I have thrown in a surprise! Can you say roasted pear?! Or course you can. Here goes nothing! Check out what you need below and let’s make yummy Roasted Pear Cheesecake with Graham Cracker & Oatmeal Crumble.

Roasted Pear Cheesecake with Graham Cracker & Oatmeal Crumble

Cheesecake Ingredients:

  • 16 ounces cream cheese, room temperature
  • 14 ounce can of sweet condensed milk
  • 1 1/2 tbsp of fresh squeezed lemon juice
  • 2 pears
  • 1/4 cup sugar
  • 1 /3 tsp cinnamon
  • 1 tsp pure vanilla extract

Roasted Pear Cheesecake with Graham Cracker & Oatmeal Crumble

Graham Cracker & Oatmeal Crumble Ingredients:

  • 1 cup rolled oats
  • 1/2 cup light brown sugar, divided
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 stick unsalted butter, room temperature + 2 Tbsps, divided
  • 3 squares Graham crackers

Roasted Pear Cheesecake with Graham Cracker & Oatmeal Crumble

Directions:

  1. In a stand mixer fitted with the whisk attachment, add 16 ounces (two 8 ounces packages) of room temperature cream cheese and beat until smooth.
  2. Add one 14 ounce can of sweet condensed milk and whip until combined.
  3. Add freshly squeezed lemon juice. And mix well.
  4. Place mixture in the refrigerator until ready to use.
  5. Peel both pears, slice one in half lengthwise and sprinkle with one tsp of sugar and 1/2 tbsp of cinnamon. Place in a small roasting pan and cook at 350 for 45 minutes. Remove from heat and place in the fridge to cool.
  6. Using a skillet add 1 tbsp of butter. Peel, core and chop the remaining pear and to melted butter and sprinkle with 1 tbsp of sugar and 1/2 tbsp of cinnamon and cook over low heat for 20 minutes. Remove from heat, place in a glass bowl and cool in the refrigerator.
  7. When chopped cooked pears are cool fold into no-bake cheesecake mixture and return to fridge.
  8. Wipe out the skillet and over medium heat add remaining butter, brown and white sugars, rolled oats, cinnamon, and nutmeg.  Sprinkle in flour a little at a time while stirring. Add crushed Graham crackers. The mixture should be crumbly. Remove from heat and set aside.
  9.  Fill a glass halfway with cheesecake mixture. Add a little bit of crumble mixture and more pear cheesecake.  Top with a roasted half pear slice and crumble topping
  10. Serve.
