Good (Cheap) Eats is having a Pantry Challenge this month. I am a wimp and usually do my “eat from the pantry month” in February because there are fewer days. Although I’m not participating, I am enjoying the ideas and recipes being shared. I particularly like the idea of using leftover spaghetti noodles and spaghetti sauce to create a fast and easy minestrone soup. That is a clever idea! I am currently pregnant so even though I love cooking, I am finding less motivation and creativity. Simple meals and leftovers have saved my bacon over the past several weeks.
