During the summer when I have excess vegetables I use them as a frugal, low-calorie, high fiber substitute for pasta in many dishes. Tonight I am sharing my Vegetable Lasagna with Spinach “Noodles” on $5 Dinners. I replaced the pasta layer with a layer of spinach leaves.
You can replace the lasagna noodles with any greens you have in excess like Swiss Chard, kale, arugula, or beet greens.

I will be sharing another veggie substitute recipe tonight that I am excited about. I used steamed cauliflower in place of pasta in my super easy pasta salad recipe and it was so much better than I expected and I love cauliflower. 🙂

This is a wise idea and I think, I would prefer the vegetables to the pasta.

Crazy! I just made zucchini lasagna last night. I replaced all of the pasta with zucchini (although I added too much sauce). It was delicious and we had leftovers for lunch today. And instead of my normal ricotta, I mixed equal parts ricotta and cream cheese (whipped) and it was wonderful.
