This Strawberry Spinach Salad recipe is one of my favorite salads! It is topped with a raspberry vinaigrette made with fresh raspberries.
I enjoy this Strawberry Spinach Salad alone for lunch or as a side dish for dinner. It is also very easy to make and since spinach is hardier than other greens it can be made an hour or two ahead of a party without worrying about wilting.
I have also discovered that my kids are much more likely to eat spinach if I mix it with strawberries and top it with raspberry dressing! Funny how that works.
I have included a recipe for Fresh Raspberry Vinaigrette as well, but I won’t tell anybody if you decide to go with a bottled raspberry dressing on a busy night.

Steady Plodder – It is gf if you use apple cider vinegar and use a gf mustard (the vinegar being the problem in many mustards too). If you have ground mustard in your cupboard, you could replace the dijon mustard with 1 teaspoon ground mustard.
