Chai Spiced Sweet Potatoes

No, I did not marinate my sweet potatoes in tea. Did you realize that the overpriced tea you are buying from coffee shops is actually just black tea with spices, sugar, and milk added?

You probably have most of the spices in the cupboard…and you could be making your own tea…or you could use those same spices to make chai spice and then use the spice mix to season sweet potatoes!

Ingredients
  • 4 large sweet potatoes (or yams) cut into bite size pieces (I leave the skin on)
  • ½ cup apple juice
  • ¼ cup honey
  • 5 teaspoons chai spice
Directions
  1. Spread the sweet potato pieces in a greased baking dish.
  2. In a small bowl, combine apple juice, honey, and chai spice.
  3. Drizzle spice mixture over the sweet potato. Toss to ensure the sweet potatoes are thoroughly coated.
  4. Cook at 400 degrees for 30 minutes or until fork tender.

    Hi Alea my love! Yes! A few years back an Indian friend of mine shared the "secret ingredients" in chai tea with me, though my version adds in star anise for a bit more of a liquorice flavor. Not sure that would work well with these sweet potatoes, but the mix you are using sounds divine! So warming and lovely on a cold winter's day!     I have been meaning to look up a chai tea recipe for weeks now. I'm looking forward to see the recipe on Friday! And the potatoes look delicious, I never would have thought to add them to potatoes. Looks yummy!

    Mmm, all of those warming spices, especially cardamom, what a great pairing with sweet potatoes. I bet everyone gobbles this up. Do they crisp at up at all? I don't have any sweet potatoes, but I do have some butternut squash, and I think my family will love your recipe. Thanks for sharing with the Hearth and Soul hop.

    I am looking forward to the chai tea recipe…and eager to see if all the spices dissolve, unlike the last one I tried. Sediment in the bottom of the cup is not enjoyable, so I went back to the $4/canister Pacific Chai.
