This chicken noodle casserole recipe combines the flavors of homemade chicken noodle soup in a delicious casserole.
Jump to RecipeWhile I was sorting laundry today, my four-year-old combined olive oil, peanut butter, and a Costco-sized container of cinnamon and put the mixture in coffee filters. When I reminded him that he was not supposed to cook without a grown-up, he said, “I wasn’t cooking, I was making mole traps”. We now have a new house rule! It has been added to our other four-year-old specific house rules such as: Don’t write on yourself with makeup, especially waterproof mascara. Don’t jump on Mommy when she is asleep. Don’t paint anything with nail polish, even if it is gold and sparkly.
As the evenings cool off, I am beginning to crave comfort food. I was thinking of making chicken noodle soup, but it is hard for my four-year-old to eat soup without making a mess. And after all of the messes he makes between sun up and sun down, I really don’t want to deal with another one. So instead of soup, I combined the ingredients used in chicken noodle soup to create a casserole.
Chicken Noodle Casserole Recipe
Ingredients
Casserole Ingredients:
- 12-ounce package rotini noodles
- 2 cups cooked chicken, diced
- 1 1/2 cups carrots, sliced
- 1 1/2 cups frozen peas
- 1 1/2 cups frozen corn
- 1/2 cup diced onion
- 1 celery stalk, diced
- 1 cup mozzarella cheese
Sauce Ingredients:
- 1/4 cup cornstarch
- 1/2 cup milk ( I use almond or rice milk)
- 2 cups chicken broth (How to make Chicken broth in a slow cooker)
- 1 teaspoon poultry seasoning (DIY poultry seasoning mix)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon parsley
- 1/8 teaspoon pepper
Directions:
1. Preheat oven to 350 F. Grease a casserole dish.
2. Cook noodles according to the package directions.
3. While the noodles are cooking, add the cornstarch and milk to a medium saucepan. Stir to combine. Slowly stir in the chicken broth. Add the poultry spice, onion powder, garlic powder, parsley, and pepper. Cook over a medium-low flame and use a whisk to stir continuously until the sauce thickens.
4. Place the drained noodles in the casserole dish. Add the chicken, peas, carrots, corn, onion, and celery to the pasta. Stir to combine.
5. Pour the sauce over the noodle mixture and stir to coat the noodles, chicken, and vegetables.
6. Place foil over the pan and bake at 350 degrees for 20 minutes.
7. Remove the foil and top with shredded cheese. Place it back in the oven for 10 minutes or until the cheese is melted.

- 2 cups chicken broth

- 1 teaspoon garlic powder
- 1/2 teaspoon parsley
- 1/8 teaspoon pepper
Instructions

I laughed at the rules and then read them to my husband who also laughed. We have a 2 1/2 year old son who also gets fun rules and the list is quickly growing. We do hide the markers but this post makes me think of other things that need to be hidden 🙂

Wow, this post made me smile! I had forgotten all the trouble little boys can get into now mine is nearly grown up…and I love those house rules! Your chicken noodle casserole sounds like perfect comfort food. I love a warming soup for dinner, but I sometimes get disappointed faces if I serve soup it for our main meal. This lovely casserole on the other hand, would be very well received! Thank you for sharing it.
