Gluten-Free Chocolate Muffins with Mint Chips

This gluten-free chocolate muffin recipe with mint chips is delicious twist on chocolate muffins and makes a delicious addition to a brunch or fun after school snack.

Gluten-Free Chocolate Muffins Recipe with Mint Chips - Enjoy these decadent gluten-free chocolate-mint muffins for brunch or as an afternoon snack!

Is there any better combination of flavors than mint and chocolate? I think not! We often associate mint treats with Christmas and St. Patrick’s Day because of the green color of the mint chips. I think it is ridiculous to limit mint chips to recipes only a couple months out of the years, so when mint chips are readily available at the stores over the holidays, I stock up!  The shelf life of baking chips is usually is usually 6 months to a year, so I can enjoy mint flavored treats year round if I buy extras at the holidays.

I don’t really consider this Gluten-Free Chocolate Muffins Recipe with Mint Chips a breakfast food. They make a delicious afternoon snack or after dinner dessert! However, we will be enjoying these gluten-free chocolate mint muffins for breakfast on St. Patrick’s Day as a special treat. Because green mint chips is a perfect excuse to eat these decadent muffins for breakfast on St. Patty’s Day!

Gluten-Free Chocolate Muffins Recipe with Mint Chips

Ingredients:

  • 1 cup water
  • 1/4 cup cocoa powder
  • 3/4 cup brown rice flour
  • 1/2 cup tapioca flour
  • 1/4 cup potato starch
  • 1 teaspoon xanthan gum
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup oil
  • 1 1/2 teaspoon gluten-free vanilla
  • 1 egg
  • 3/4 cup mint flavored chips

Directions:

  1. Preheat oven to 400 degrees.
  2. Heat water to boiling. Stir the cocoa powder into the hot water and let sit while you are mixing the other ingredients.
  3. In a medium bowl, combine brown rice flour, tapioca flour, potato starch, xathan gum, baking powder, granulated sugar, brown sugar, and salt.
  4. Add cocoa mixture, oil, vanilla, and egg. Mix well.
  5. Stir in mint chips.
  6. Divide the batter between 12 – 16 muffin cups.
  7. Bake at 400 degrees for 17 – 20 minutes or until an inserted toothpick comes out clean.

    These look great! Thank you for the recipe that DOES NOT use Tree Nuts. There are SO many gluten free recipes lately that include Almond Flour!

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
