I like making a huge batch of Barbecue Chicken. The first night we simply enjoy it as is. Then I shred the leftover barbecue chicken and use it to create “encore meals”. Now I am perfectly happy to mix up leftover barbecue chicken in a bowl with baked beans and sweet corn, but my family usually wants something that resembles a real dish.

I make a BBQ chicken shepherd pie. I combine two boxes of Jiffy cornbread with 2 eggs and 2/3 cup of milk, i pour the mixture into a greased 9 x 13 pan and bake until done. Then I boil 6 medium potatoes and mash them with butter. I layer the pan by placing the BBQ chicken on the cornbread then a layer of mashed potatoes and top with Mexican shredded cheese. I then bake in a 375 degree oven for 25 minutes or until cheese is melted and bubbly.
