Can you feel the Christmas cheer?! No? Well, you may just need a majorly delicious Apple Cider Sour with Meringue Rim. Why? Well, have you taken a look at this cocktail? If you like the way it looks with its festive meringue rim and all, then you are going to go gaga over the taste. It is absolutely, crazy delicious!

This is the perfect holiday pre-dinner, during, and after dinner cocktail. It is fresh, light and it only takes two shakes of a lamb’s tail to make. Promise. And honestly, how can this cocktail fail? It has Honey Crisp Apple Juice, ginger bourbon, a bit of lemon sour mix, bourbon maple syrup, and swirled within an ice floe. Doesn’t that sound good? But I didn’t just stop there, I went and added a peppermint flavored meringue rim. GAH is right! How very festive is that?!

Apple Cider Sour with Meringue Rim

Ingredients:

  • 0.5 ounces bourbon maple syrup
  • 1 oz. lemon sour mix
  • 1 1/3 oz. ginger bourbon
  • 3.5 oz. honey crisp apple cider
  • 3 whole cranberries
  • ice
  • peppermint meringue

Apple Cider Sour with Meringue Rim- ingredients

Directions:

  1. In a cocktail shaker add ginger bourbon, lemon sour mix, bourbon maple syrup, honey crisp apple cider, and fresh ice.
  2. Place the lid on the cocktail shaker and give it a good shake for 30 seconds.
  3. Strain into a rocks glass with a meringue rim and filled with fresh ice.
  4. Garnish with whole fresh cranberries.
  5. Serve.

Meringue Rim

  • 4 large room temperture egg whites
  • 1/8 teaspoon sea salt
  • 6 1/2 tablespoons granulated sugar
  • 7 tablespoons powered sugar
  • 1/8 teaspoon peppermint extract
  • 6 drops of red food coloring
  • 6 drops of green food coloring

Directions:

  1. In the bowl of a stand mixer fitted with the whisk attachment add egg whites and sea salt. Whisk on med-high until egg whites are white and fluffy. This should take one (1) to two (2) mintues.
  2. Continue to whisk and gradually add the granulated sugar, add the sugar in 3 to 4 batches, allowing a few (1:30 to 2:00 minutes) inbetween batches. This will keep the meringue light and fluffy.
  3. Next, add the peppermint extract.
  4. Finally add the powdered sugar a litte at time until it is all incorporated.
  5. Remove the bowl from the stand mixer and dot the meringue with six (6) drops of red food coloring and six (6) drops of green food coloring.
  6. Gently fold merigue until you have swirls of red and green. Dip the rim of your glass into the meringue and place into the fridge until you are ready to use.

  • Place the lid on the cocktail shaker and give it a good shake for 30 seconds.
  • Strain into a rocks glass with a meringue rim and filled with fresh ice.
  • Garnish with whole fresh cranberries.
  • Serve.
