Baking With a Limited Number of Cookie Sheets

Most of my cookie recipes make several dozen cookies, which is a good thing since I live with several cookie monsters. The problem lies with the fact that I only own 2 cookie sheets. After removing freshly baked cookies to a cooling rack, I wash the cookie sheets in cold water and thoroughly dry it before using it on the next batch. I have found that using a cool baking sheet prevents the cookie dough from beginning to melt before it is put in the oven, which can affect the texture and shape of the cookies.

    I have more than one sheet, but I only ever use two! My mom's kitchen only had two, so I learned to deal, and got to the point where I didn't want the hassle of washing more than two.

    My method: let the cookies cool briefly, then place the cookie sheet somewhere chilly – outside in the winter, in front of the AC or a fan in the summer. That's usually enough to cool them down in time for the next batch of dough before the batch in the oven come out!

    You know I only have two cookie sheets too….I wonder why we just dont buy two more so we can have two in the oven and two cooling/washed? Don't know why.

    Good idea! I run into the same limitation when I bake, especially at Christmas-cookie time.

    BTW, I finally found Pepsi Throwback at the store. There was no shelf space for it, but we happened to be there just as the Pepsi rep was stocking the shelves.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
