This beef and cabbage soup recipe is a hearty recipe for cold evenings.

This is the first recipe that I created on my own. As a teenager, I lived with my Dad and he and I would take turns cooking. He always improvised and I tended to rely on family recipes and prepackaged mixes. My dad kept encouraging me to take chances and experiment. One day I had some leftover cabbage from making Bierocks and I decided to follow my Dad’s advice and created this hearty soup.

Stretch Your Stew Meat with this Tip:

Stew meat often comes in rather big chunks. I use kitchen scissors to cut each chunk of meat into several small pieces to add a robust, meaty flavor without adding lots of meat.

Save Time by Cooking Diced Onion While Browning the Stew Meat

I brown the onion with the meat so I don’t have to have any added oil in the soup. Even though I use meat that has the fat trimmed, there is still enough fat on the meat to brown the onion. As a bonus, I think cooking the onion with stew meat, makes the beef more flavorful.

Beef and Cabbage Soup Recipe

Ingredients:

  • 1 pound stew meat
  • 1 cup diced onion
  • 8 cups beef broth (How to make beef broth in a slow cooker)
  • 2 cups shredded cabbage
  • 2 cups sliced carrots
  • 2 cups diced potatoes
  • 2 stalks of celery, diced
  • 1 teaspoon sage
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley
  • 2 cups uncooked noodles(or gluten-free noodles)

Directions:

  1. Add meat and onion to a large pot and brown.
  2. Add the potatoes, carrots, celery, and spices.
  3. Cook over medium-high heat until it reaches a boil.
  4. Add the noodles and simmer for an additional 10 minutes.

This soup is hearty enough to serve on its own, but I often serve it with bread and a garden salad.

Ingredients

  • 1 pound stew meat

Instructions

  • Add meat and onion to a large pot. Cook until the meat is browned on all sides.
  • Add the beef broth, cabbage, carrots, potatoes, celery. Stir in the sage, basil, garlic powder, and parsley.
  • Cook the soup over medium-high heat until it reaches a boil.
  • Add the noodles and simmer for an additional 10 minutes.

    Alea! I lived with my dad when I waas a teenager, too, which meant there was a lot of Hamburger Helper. But it also forced me to push my boundaries and learn to cook, and I'll always be greatful. Thanks for sharing the memories and recipe with the Hearth and Soul hop.

    Looks nice and comforting. We have had cold days and then it warms up again. Soon it will be cool and crisp (and freeze so all my outdoor allergens will die!) and soups and stews will again grace my table=I'll keep this one in mind!

I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
