I am busy making extra food, so that my husband and kids do not starve while I’m out of town this weekend. Today, I made a double batch of Cajun Black Beans and Rice for lunch. I will freeze the leftovers for an easy freezer meal for my family.
Cajun Black Beans and Rice
Ingredients
- 1 T. olive oil
- 1/2 large onion diced
- 2 cloves garlic minced
- 2 cups cooked brown rice
- 1 cups cooked black beans or a 15 oz. can, pour off liquid
- 2 cups diced tomatoes or a 14.5 oz. can, don’t drain
- 1 bell pepper diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon sage
- 1/2 teaspoon basil
- 1/2 teaspoon hot-pepper sauce
- dash of pepper
Instructions
- In a large pot, sauté the onion and garlic in the olive oil until tender.
- Add all of the other ingredients and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until all of the flavors have blended.
I put a bottle of hot sauce on the table for the brave souls who can take their beans and rice with a side of fire! This goes well with cornbread and a salad.

Well–I was born in southwest Louisiana so I love cajun food–I don't make it often any more though. I'll have to try this recipe–I usually use red beans. Thanks for the recipes.

This sounds delicious! I've almost got my menu done for the next two weeks and I'm going to see if I can fit this in! The hot sauce will definitely be going in though-we like things spicy!
