Cranberry Walnut Rotisserie Chicken Salad

Cranberry Walnut Rotisserie Chicken Salad Recipe - Here is a quick and easy chicken salad recipe using a rotisserie chicken, cranberries, and walnut.

If you make rotisserie chicken a regular part of your menu but never know what to do with the leftovers after the first meal I have a delicious rotisserie chicken recipe for the next day that you will want to make every time. Cranberry Walnut Rotisserie Chicken Salad makes a perfect lunch or even a light dinner on bread, crackers, or alone.  Me personally? I love a chicken salad stuffed with as much yummy goodness as it can handle: sweet, tart, crunchy, creamy.. mmmm.  If you are are looking for a chicken salad recipe for lunch, or something pretty and tasty to add to the table at a shower or tea this is the one.

Cranberry Walnut Rotisserie Chicken Salad

Ingredients:

  • 2 cups shredded or chopped chicken
  • 1/2 cup mayonnaise
  • 2 tsp. white wine vinegar
  • 1 celery stalk,diced fine
  • 1/2 cup chopped walnuts
  • 1/2 cup dried  cranberries
  • 1/2 tsp. parsley
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Directions:

After pulling my chicken meat off my rotisserie chicken I like to chop it fairly small.

Combine all ingredients well in a bowl.

Place in refrigerator for at least an hour- it just tastes better cold and the flavors all combine much better when it hangs out in the fridge for a bit.

Ingredients

  • 2 cups shredded or chopped chicken
  • 1/2 cup mayonnaise
  • 2 tsp. white wine vinegar
  • 1 celery stalk diced fine
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 1/2 tsp. parsley
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  • Pull the chicken meat off my rotisserie chicken and chop it into small pieces.
  • Place all of the ingredients. Combine all the ingredients until thoroughly mixed.
  • Place the chicken salad in the refrigerator for at least an hour before serving.
