Dinner Menu for the Week of 6/15

I replaced last week’s scrambled eggs night for frittatas.

Monday – Teriyaki Chicken, Basmati Rice, Glazed Carrots

Tuesday – Use leftover chicken and carrots in stir fry, use leftover rice to make fried rice

Wednesday – Use leftover chicken to make a version of Asian Chicken Salad

Thursday – Roast Beef, Bacon Ranch Chopped Salad

Friday – Use leftover roast beef to make BBQ Beef, baked beans, corn on the cob, garden salad

Saturday- YOYO Dinner

Sunday – Salmon, yellow rice, Sauteed Asparagus with Garlic, garden salad

    That all sounds great! I definitely want to try making Chinese Chicken Salad, it's one of my favorites. You should check out springpad's weekly meal planner, it's a great way to organize all of your menus and recipes and I think you'd really like it.

    Melissa, I think fried rice turns out better if you use old and/or dry rice. Most people add the green onion at the end, but my dc were leaving egg on their plate, so I started adding the onion with the egg and the egg started disappearing.

    Liz,The frittata turned out well! I added an extra splash of milk, because things tend to take a little longer to cook at altitude and extra liquid prevents things from becoming too dry. I have never put a frying pan in the oven before, so I was a little worried. But I took a walk on the wild side, tested the limits of my 14 year old circulon pans and it turned out great! I used taco meat, mexican cheese, tomatoes, and onion. I am looking forward to trying some of the other combinations that you suggested.

    Melissa – try adding some Worcestershire sauce to your fried rice. I did it by accident one time (used some leftover marinade that had worcestershire sauce in it), and it turned out great!

    Everything sounds good! I'd like to make better use of leftovers than just having them for lunches (although leftovers are much more fun than PB&J every day).

    I'll have to try your recipe for fried rice. We make it occasionally, but it's never quite right. I do like to add a few drops of dark sesame oil to the fried rice; we like that flavor, but otherwise the recipe needs work! 🙂

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
