Dinner Menu – Week of July 6th

I am so excited! I think we will be eating from the garden for every one of our meals next week. I should be able to pick 5 tomatoes tomorrow and use them to make spaghetti sauce along with onion, garlic, oregano, basil, and parsley from the garden! I am planning on adding green beans from the garden to the stir fry on Tuesday. The vegetables for Saturday and Sunday are a little more iffy, but it is amazing how fast they grow. I have penciled them in, and if they are not ready I will erase my plans and use what ever is.

Monday – Spaghetti and Garden Salad

Tuesday – Grilled Steaks with Worchester,  Basmati Rice with Onion and Garlic, and Garden Salad

Wednesday – Use leftover spaghetti sauce and leftover rice in Rice Lasagna and Garden Salad

Thursday – Dinner at friend’s house

Friday – YOYO Dinner

Saturday – Grilled Chicken, Rice with Garden Vegetables, and hopefully Summer Squash with Chives if the squash matures in time.

Sunday – Use leftover grilled chicken and hopefully broccoli from the garden in Pasta Salad

    Your menu looks great. How exciting that you will get garden produce for each meal this week 🙂 I miss that so much – our small container garden is not producing that much. I'm hoping your squash cooperates 🙂

    Looks like a great plan! I'm looking forward to getting more produce from our garden; today I picked one little squash, but I was happy to see a few tiny tomatoes starting to grow!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
