The classic lunchbox standard is of course a peanut butter and jelly sandwich but if you are like me and have kids that want something special in their lunchbox you have at some point or another found yourself considering purchasing those frozen ready-made crust less sandwiches. I refuse to pay for something I know I can easily make myself, but the convenience of popping from the freezer into a lunchbox does appeal to me. So I created my own version as can you!
Homemade Crustless PB&Js

Instructions
- Mix peanut butter and jelly together in small bowl.
- Spread over center of one piece of bread avoiding edges.
- Place second piece of bread on top and crimp edges.
- Use cookie cutter if desired to make sandwich in specific shape or simply remove crusts with knife.
- Wrap individually in plastic wrap then store in freezer for up to one month in gallon freezer bag.
- Date each sandwich bag with permanent marker.
Options for Crustless Sandwich Fillings:
Chicken Salad
Ham & Cheese (can be toasted or microwaved for Hot Ham & Cheese)
Turkey & Swiss
Nutella & Honey
Note: I prefer to keep the crusts and make croutons with them later.
