How to Make Lentil Flour

Here are directions for how to make lentil flour using a grain mill.

How to make lentil flour.

 

Lentils are approximately 25% protein and high in fiber, making them a healthy addition to your recipes. Lentils are also naturally gluten-free, so I decided to experiment with adding lentils to more of our dishes, including baked goods.  I have seen a number of American chefs cook lentils, then mash them before adding the lentils to baked goods, but I knew from my Indian friends that lentils can be made into a flour. Since I wanted to use the lentils in place of wheat flour, I ground a pound of lentils using a grain mill to create lentil flour.

While you can make lentil flour in a food processor, the lentils are so hard that you have to frequently stop and allow the food processor to cool off, so that it doesn’t overheat. The method I used to make Lentil flour is similar to the method used to make Urad Dal Flour a lentil flour that is used in Indian cuisine.

How to Make Lentil Flour

Ingredients:

1 pound of lentils

Directions:

Place 1 pound of lentils into a fine-meshed sieve or colander and rinse the lentils thoroughly under cold water. Remove any debris or discolored lentils.

Lay a dish towel on a large baking sheet and spread the rinsed lentils over the towel in a single layer. Pat the lentils with another towel to remove excess liquid. Let the lentils sit until they are completely dry.

Once the lentils are completely dry, place the lentils in a large skillet and toast them over medium heat for approximately 5 minutes. Stir frequently to prevent the lentils from burning. Remove the lentils from heat and let the lentils cool completely.

Preparing to make lentil flour using a grain mill

Attach the Mockmill Grain Mill to your KitchenAid  mixer. Set it to the finest setting. Place your toasted lentils in the hopper. Turn on the mixer and grind the lentils.

How to Make Lentil Flour

Sift the lentil flour through a fine sieve into a bowl or container. You can send any pieces of lentils that are too large to pass through the sieve back through the grinder.

Store the lentil flour in a sealed container.

  • Attach the Mockmill Grain Mill to your KitchenAid mixer. Set it to the finest setting. Place your toasted lentils in the mmm. Turn on the mixer and grind the lentils.
  • Sift the lentil flour through a fine sieve into a bowl or container. You can send any pieces of lentils that are too large to pass through the sieve back through the grinder.
  • Store the lentil flour in a sealed container.

    I have found that an electric coffee grinder makes fabulous flour from rice pearl barley lentils and chicken peas. I have combined with frozen green peas and dried onion or garlic.
