For whatever reason, having “breakfast for supper” is one of the most satisfying family meals. Everyone loves it, it’s quick and easy to make, and the hearty ingredients keep tummies full until breakfast the next day. This keto version of scrambled eggs takes advantage of protein-rich eggs and velvety fats from butter, cheese, and avocado.

The cooking method is simple and clean-up is a breeze with a non-stick skillet. Start with a pat of butter in a warm pan and do everything gently. The action is more of a folding than scrambling, really. At the end, you’ll add the diced avocado and let it warm just a bit before serving. This recipe serves one to two people, so double or triple the ingredients if you’re making it for the whole family.

Keto Scrambled Egg Variations:

This is a simple, satisfying recipe as written, but you can add flavor and color by stirring in fresh chives, cilantro, or parsley just before serving.

Additionally, if you have leftover sautéed mushrooms, spinach, or diced bell pepper, those would also be excellent folded in at the end.

For a spice kick, top the keto scrambled eggs with hot sauce or salsa.

You can also serve bacon, sausage, or smoked salmon alongside the veggies and eggs for added protein.

Keto Scrambled Eggs Substitutions:

Mozzarella: You can use cheddar, Monterey Jack, gouda, or cream cheese for different flavors and consistency.

Avocado: If your avocado isn’t ripe, use sour cream or a dollop of cream cheese stirred in at the end.

Ingredients:

  • 2 eggs
  • 1 ripe avocado, diced
  • ¼ cup shredded mozzarella
  • 1 teaspoon butter
  • salt and black pepper to taste

Directions:

1. Crack the eggs into a bowl and beat them with a whisk until they are smooth. Season the eggs generously with salt and a dash of black pepper.

2. Peel and dice the avocado into small chunks. Set it aside.

3. Melt the butter in a non-stick skillet over low heat.

4. Pour in the beaten eggs and stir gently with a spatula. As the eggs begin to set, sprinkle in the mozzarella and continue folding until soft curds form.

5. Just before removing the eggs from the heat, stir in the diced avocado. Let the residual warmth soften it slightly while preserving its texture.
