No-Bake cookies are hands down one of my favorite cookies. This Keto Peanut Butter No-Bake Cookies Recipe is easy to make and satisfies my sweet tooth without loads of carbs!

I really love these cookies because they are easy to make and perfect for when you want something chocolate! And these cookies are made with only 5 ingredients! You get creamy chocolate, the crunchy texture of unsweetened coconut, and that salty/sweet combo you love in traditional no-bake cookies.

These Keto No-Bake cookies are even easier to make than traditional no-bake cookies, because you don’t even have to cook them on the stovetop. You just need melted butter to make them, which you can do in 30 seconds in the microwave.

They must be kept in the refrigerator or freezer because they do melt quickly if left out.

Keto Peanut Butter No-Bake Cookies Recipe

Ingredients:

  • 1 1/3 cups creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 Tablespoons unsweetened cocoa powder
  • 2 cups unsweetened coconut flakes
  • 2 Tablespoon melted butter

Directions: 

  1. Line a large baking sheet with parchment paper.
  2. Combine the peanut butter, vanilla extract, melted butter, coconut flake and cocoa powder mixing well. The mixture will be gooey.keto peanut butter no bake recipe mix
  3. Scoop the no bake cookies onto the parchment paper on the baking sheet. Use the back of the spoon to gently press/shape the ingredients into a 3″ cookie. chocolate peanut butter keto no-bake cookies on parchment paper
  4. Once you have all the cookies on your baking sheet, place in the freezer for 30 minutes.

Store in a large freezer bag in the freezer for whenever your sweet tooth hits, make sure you keep them in the freezer or refrigerator because they do melt quickly if left out.
