Menu Plan with Recipe Ideas for Leftover Steak

Menu Plan with Recipe Ideas for leftover steak

Like many Americans, we will be grilling steaks on Memorial Day. Whenever my husband grills, he always puts extra meat on the barbecue, so that I can use it in recipes through out the week. My menu plan incorporates recipes to use the leftover steak.  I try to alter the flavors and the way I use it to create variety despite using some of the same key ingredients. We will also have 3 meatless meals to make up for the fact that we will be consuming so much beef this week.

Menu Plan with Recipe Ideas for Leftover Steak

Monday – Grilled Steaks with Worcestershire Sauce Marinade, Grilled Corn on the Cob, Herb Roasted New Potatoes, and Nutty Broccoli Salad.

Tuesday – Use leftover steak to make Southwest Steak Salad with Honey Lime Dressing.

Wednesday – Olive Garden Copycat Minestrone Soup and a garden salad.

Thursday – Use leftover steak  to make Steak and Artichoke Frittata. Serve it with Strawberry Spinach Salad with Raspberry Vinaigrette.

Friday – Make steak tacos by adapting Tegan’s Taco Recipes. I will cut up 2 cups of bite size pieces of steak, add 1 1/2 – 2 cups diced tomatoes and 1 -2 tablespoons of taco seasoning and cook it over a medium heat until it is heated through. Serve with Mexican Rice and Black Beans.

Saturday – Pizza Night! Pizza using gluten-free pizza dough and my easy pizza sauce. Serve with a garden salad.

Sunday – Use leftover black beans to make Mushroom and Black Bean Enchilada Casserole. Serve with a garden salad.
