Menu Plan – The Eat From the Pantry Edition

Last week was unusually expensive, so I have declared it a “eat from the pantry week” to save money on groceries. I have chicken in the freezer and lots of fresh fruit and veggies in the garden, so the only thing I will need to buy is milk.

Monday – Teriyaki Chicken, Basmati Rice, and Garden Salad

Tuesday – Use some of the leftover chicken and rice in a stir fry

Wednesday – Use some of the leftover chicken in Asian Chicken Salad

Thursday – Use the last of the leftover chicken and rice to make Chicken and Rice Soup with a twist

Friday – YOYO* Dinner

Saturday – Vegetable Garden Minestrone Soup and Garden Salad

Sunday – Use a saved ham bone to make split pea soup and Garden Salad

*YOYO – means You are On Your Own. I have frozen individual size containers of past meals like White Chili for the kids to pull out and nuke in case there are not enough leftovers in the refrigerator.

    Doing the same thing- just bought the milk- but the fruits and veggies are from a CSA instead of the garden!

    Great menu and it looks to me like you'll still be eating pretty well this week.
    We have had house guests and I do seem to have unusual quantities of frozen leftovers, so I may be steering clear of the store too for a while 😉

    Love the idea of cooking chicken once and getting a few more meals out of it. It's such an efficient way to save time and money without boring the family with the same exact meal every day.

    One of these weeks I'll try eating from the pantry. Our freezer has been emptied because nothing has been on sale; this week we're stocking up on chicken and pork chops.

    Great minds must think alike. We are doing a pantry week as well. 🙂 I still haven't been able to stretch one meal through out the week like you do. Baby steps 🙂

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
