Menu Plan – Week of March 22nd

I chose to play in the garden on my first day back from vacation instead of restocking the refrigerator, so the first couple days of this menu are pantry/freezer meals. My husband did make an emergency store run for milk, eggs, vegetables, fruit, and dark chocolate M&M’s. I will reluctantly return to my schedule of grocery shopping on Monday and baking day on Tuesday this week.

Monday – Pink Bean and Ham Soup and garden salad

Tuesday – Garlic Chicken,  Garlic Green Beans, and White Basmati Rice

Wednesday – Use leftover chicken and rice in White Chicken Chili, Hummingbird Muffins, and Salad

Thursday – YOYO (You are On Your Own)

Friday – Casual Party Mexican Buffet with Cola Cake and Oatmeal Scotchies for dessert

Saturday – Rew’s Birthday Party – Pizza Casserole, fruit salad, and garden salad. The details on the birthday cake are still being worked out.

Sunday – Use leftovers from Mexican Buffet to make Taco Salad

    Man, i need a you are on your own night! I really should better plan my menus by shopping trip. Sometimes I do really well and don't have to go back but sometimes I have to go several times because my memory is awful.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
