One of the things that I like most about paleo desserts is that while they are usually gluten-free and they are often made with ingredients that are fairly easy to find. Not always, but usually. On both accounts. If you have Celiac Disease, be sure to double check the ingredients because a person who primarily follows a paleo diet may decide to fudge a little in a dessert recipe and get away with it, but a person with Celiac Disease cannot.
Paleo desserts often use honey, maple syrup, or dates to sweeten the desserts. Occasionally coconut palm sugar is called for in a paleo desert recipe.
When a paleo dessert has a crust or mimics a gluten-filled dessert recipe flour substitutes are needed. The most commonly used flour substitutes are almond flour and coconut flour. Occasionally other nut flours are used. Tapioca starch and arrowroot powder are occasionally used to give recipes a lighter texture and provide elasticity.
Paleo desserts often call for coconut oil or avocado as the “oil” in recipes. Don’t be put off by avocado! Avocado has a very mild flavor and takes on the flavor of the other ingredients.
