Pumpkin Pie Spiced Sweet Potatoes Fries

I think sweet potato fries are one of those great compromise foods. My kids get to eat “fries” and I get to watch my children enjoy a vitamin rich vegetable! My kids love sweet potato fries. They will eat them just about any way that I cook them: plain, garlicky, spicy or coated with pumpkin pie spice.

Ingredients
  • 3 large sweet potatoes or yams, cut into large fries
  • 2 tablespoons apple juice
  • 1 tablespoon honey
  • 1 teaspoon pumpkin pie spice (How to make Pumpkin Pie Spice)
Directions
  1. Preheat oven to 450 degrees. Grease a large baking sheet.
  2. In a small bowl, combine apple juice and honey. Microwave for 20 seconds to melt honey. Add pumpkin pie spice and mix well.
  3. Place Fries in a large bowl. Pour honey-spice mixture over the fries. Toss to coat.
  4. Place fries on greased baking sheet. Bake at 450 degrees. Turn after 15 minutes, cook for an additional 15 – 20 minutes or until the outside is golden brown and slightly crisp.

    My husband loves sweet potato fries but I never thought of making them with pumpkin pie spice..lmsweet idea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
