I wanted to use $5 Dinners Rice with Garden Greens recipe, but I was unable to access her site so I made up my own version which ended up including an ingredient that was inspired by Amanda at Coping with Frugality. As it turns out I did not have the 4 cups of spinach called for in $ 5 Dinner’s recipe, so I would have had to create something else even if I had been able to access her site that day.
Ingredients:
2 cups leftover broth that I froze in 1 cup increments as suggested in this post by Coping with Frugality.
2 cups Minute Brown Rice (I used a coupon and bought this box for .75 cents last month. I had never used it before, but thought it might be nice to have a fast cooking rice for hot summer evenings.)
2 green onions, finely chopped
4 basil leaves, finely chopped
1/4 cup fresh parsley, coarsely chopped
2 cloves garlic, finely chopped
1 cup fresh peas, shelled and rinsed
dash of pepper
Combine all ingredients in a medium sauce pan over high heat. Once it begins to boil, cover with lid, turn heat to low, and simmer for 10 minutes. Remove from heat and let sit for 3 -4 minutes. This recipe was easy, fast, and delicious.
