Rocky Road Bark Recipe

Once the kids start school it seems like party season begins. Sometimes we are asked to bring an item and for some occasions we want to bring a hostess gift. In most cases chocolate serves the purpose. Bark recipes are fast and easy, so they allow me to fit a homemade gift into my hectic schedule. The chocolate can be melted in the microwave, so there is no need to turn on the oven or stove to create this bark recipe.

The chocolate melts at a low temperature, so you don’t have to worry about the chocolate melting the marshmallows.

This easy Rocky Road Bark recipe comes together quickly.

Serves: 1 pound
Ingredients
  • 12 oz. semi-sweet or dark chocolate pieces
  • 1 cup almonds, coarsely chopped
  • 1+ cup miniature marshmallows
Directions
  1. Line a cookie sheet with foil or parchment paper.
  2. Melt chocolate pieces according to package directions.
  3. Stir in almonds and marshmallows.
  4. Spread the mixture on to the cookie sheet.
  5. Freeze for 30 minutes to quickly set or place in the refrigerator for 2 hours.
  6. Break into pieces.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
