Green cauliflower, sometimes called broccoflower, is one of my favorite vegetables. It was readily available when we lived in sothern California, but now it is rare to find it in grocery stores, making it a special treat. It has the texture of cauliflower, but is more flavorful.
2 Tablespoons olive oil
2 Tablespoons diced bell pepper
1/4 cups diced onions
3 cloves of garlic, minced
1 head of green cauliflower, chopped
1/3 cup julienned carrots
pepper, to taste
Add olive oil to large skillet. Over medium high heat, cook bell pepper, onions, and garlic in olive oil for 1 –2 minutes. Add cauliflower curds, and cook for 5 minutes; stirring regularly. Add carrots and dash or two of pepper and cook for 5 minutes more; continuing to stir regularly.
