Savory Roasted Sweet Potatoes Recipe

It almost seems un-American to admit it, but I am not a fan of candied yams. My family always served candied yams at Thanksgiving, so I was surprised the first time I had dinner with my in-laws and they did not. That Thanksgiving I had an ah ha moment and realized that just because my Mom and Grandma served something for a holiday meal, didn’t mean that I had to. I still make a lot of my childhood favorites, but I am intentional about picking recipes we like instead of making food just because they were a family tradition.

My favorite way to serve sweet potatoes is cubed and roasted. I like a little crispness to my sweet potatoes and don’t want them to be mushy like canned yams. While I do like roasted sweet potatoes that are on the sweeter side such as my Pumpkin Pie Spiced Sweet Potatoes, sometimes I prefer to go with savory spices to contrast with the natural sweetness of the sweet potatoes.

These savory roasted potatoes are really easy to make. After I wash them, I start by cutting them into cubes. Sometimes I peel the sweet potatoes before cutting them, but often times I don’t – you can choose which you prefer. I drizzle either olive oil or avocado oil over the cubes and toss them to get them completely coated in the oil. Then I sprinkle rosemary, garlic, onion, salt, and pepper on the diced sweet potatoes. Then I toss to coat them in the spices. Sweet potatoes take a little longer to roast than other vegetables, but they still cook in 30 minutes.

While I use rosemary, garlic, and onion to deliver the savory flavor, feel free to tailor the spices to your taste and use your favorite spice combinations instead.

Prep-Ahead Tip

You can cut your sweet potatoes a day or two before you plan to cook them. After chopping them up, place the pieces in a gallon-size plastic bag with a moist paper towel to keep them from drying out.

Savory Roasted Sweet Potatoes Recipe

These roasted sweet potato cubes are coated in rosemary and garlic, which creates a savory side dish.

Ingredients:

4 large sweet potatoes, cut into bite-size pieces
3 tablespoons olive oil or avocado oil
1 tablespoon dried rosemary
2 teaspoons garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon coarse-ground pepper

Directions:

  1. Preheat the oven to 450 degrees
  2. Add the sweet potatoes to a large baking tray or casserole dish.
  3. Drizzle olive oil over the sweet potatoes. Toss to coat veggies.
  4. Sprinkle the rosemary, garlic powder, onion powder, salt, and pepper over the sweet potatoes. Toss to coat. cubed sweet potatoes on baking tray coated with oil, rosemary, garlic, and onion
  5. Place the tray in the oven and bake at 450 degrees for 15 minutes. Turn the sweet potatoes over, then roast for another 15 minutes or until the sweet potato pieces are fork-tender. roasted sweet potato cubes with rosemary, garlic, and onion

Serve while warm.
