If you’re a fan of hands-off cooking like I am, especially on those hectic days, then slow cooker chicken recipes are a lifesaver. They turn simple poultry into tender, flavorful meals without much effort. I’ve gathered all our Crock Pot and slow cooker recipes featuring chicken or other poultry—from whole birds and broths to dips and chilis. These use everyday ingredients, and many are great for using up leftovers or prepping ahead. Head to the site for full details on each one. Let’s get into it!

Slow Cooker Rotisserie Chicken Recipe – Get that crispy, seasoned rotisserie flavor right in your Crock Pot with a whole chicken and basic spices. It’s ready in about 4 hours on high—perfect for shredding into salads, tacos, or soups.

Crock-Pot Sriracha Chicken Recipe – This one’s got a sweet-spicy kick from sriracha, honey, and soy sauce. Just dump everything in the slow cooker for tender chicken that’s great over rice or in wraps.

Crock-Pot Chicken Enchilada Casserole Recipe – Layer up tortillas, chicken, cheese, and enchilada sauce for an easy casserole that cooks low and slow. It’s cheesy, comforting, and feeds a crowd without the fuss of rolling.

Slow Cooker White Chili Recipe – A hearty, creamy chili with chicken, white beans, corn, and mild spices. Brown the chicken first, then let the Crock Pot handle the rest for 4 hours—top with cheese and peppers for extra flair.

Baked Buffalo Chicken Dip Recipe  – Spicy buffalo sauce meets shredded chicken, cream cheese, and ranch in this crowd-pleasing dip. For the slow cooker version, mix and cook on high for 2 hours until bubbly. This dip recipe includes an option for cooking it in a Crock-Pot.

Bonus tip: For easy shredded chicken, place boneless thighs or breasts in the slow cooker with a bit of broth or water, cook on high for 3-4 hours, then shred. It’s a staple for quick meals like salads or casseroles.

These recipes keep things frugal and flavorful while maximizing your slow cooker’s potential.

Welcome. I'm Alea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
