S’mores made by the campfire is a happy tradition we past down to our children. Those three delicious ingredients sandwiched together in all its glory have come a long way and continue to change. We find just about any way to roast our marshmallows when campfires aren’t available. I have made them by candle light, over the barbeque grill and even over the stove burners.
In this S’more recipe we have eliminated the need for a flame by putting them in the oven. The graham cracker has been replaced with chocolate chip cookie dough and the use of a muffing pan.
S’mores Chocolate Chip Cookie Cups Recipe
Ingredients:
- Chocolate Chip Cookie Dough (recipe below).
- 12 large marshmallows
- Chocolate Syrup
Equipment:
- Cupcake Pan
Directions:
- Prepare chocolate chip dough from scratch or use a prepared chocolate chip cookie dough.
- Using a cupcake pan fill individual cups 3/4 full with cookie dough and bake according to directions.
- The last 5 minutes of cooking time place a singe marshmallow on top of cookies.
- When cookies are finished, let cool and drizzle with chocolate syrup.
Basic Chocolate Chip Cookie Recipe
If you don’t have a favorite chocolate chip cookie recipe, use this recipe to make your S’More Chocolate Chip Cookie Cups.
Ingredients:
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups semi-sweet chocolate chips
Directions:
- Beat butter, granulated sugar, brown sugar, and vanilla until the mixture is creamy.
- Slow add flour, baking soda, and salt. Stir until thoroughly combined.
- Mix chocolate chips into the batter.
- Use as called for in the recipe above.
