Southwestern Spaghetti Pie and Uses for Leftover Pasta

Southwestern Spaghetti Pie
I’m sharing my recipe for Southwestern Spaghetti Pie at $5 Dinners tonight. My Southwestern Spaghetti Pie recipe was born of a desire to not waste leftovers.  At the end of the week when I clean out the fridge I often have mix matched ingredients. Leftover noodles, but no sauce. Leftover taco meat, but no tortillas. Instead of throwing them out I repurpose them and sometimes I end up with some very unlikely combinations.

Here are a few other ways to use up leftover pasta:

Add it to soup or stew. The important thing to remember is to add the cooked pasta at the last minute and just cook it until it is heated through, so it doesn’t become mushy.

Serve in place of rice with a stir-fry. I reheat the pasta in the microwave when using it with a stir-fry.

Add cold noodles to a salad. Cold noodles make a wonderful addition to Asian Chicken Salad in place of wonton.
