My mother-in-law shared this fast and easy recipe with me. I have made it with different summer squash and it always delicious in its simplicity.
I layer the squash on top of the onions and cook them together.
Super Easy Sauteed Summer Squash Recipe
Ingredients:
- 3 summer squash, thinly sliced
- 1 small onion, chopped
- 2 tablespoons of olive oil
- dash (or two or three) of pepper
Directions:
- Add olive oil to large skillet, covering bottom. Add onions. Place squash on top of onions. Add pepper to taste.
- Cook over medium heat for 7 -10 minutes, stirring occasionally.

Oh wow, that is a lot like how I cook it too…except I use butter and we like it "browned" a bit. 🙂 Nummy, that looks so good. 🙂 Squash is such a prolific yielding crop, isn't it?? I've been quite overwhelmed with it some years. This year, we wised up and didn't plant as much! We love it when it first comes in, then get sorta burned out after a while. Then…we miss it when it's gone! 🙂

I know I’m a little late with the reply.(LOL) That recipe is so good with butter as Lori said, however, to add an even more special twist to it and make a dish that people just love, and some thinly sliced mushrooms, a little garlic powder, parsley, and a pinch of seasoned salt or regular salt. It’s a delicious, quick, and easy dish that goes over well in any setting.

Yellow summer squash is one thing that I have NOT been able to find here! I love it so much too. Maybe when I have space for a garden I'll just plant my own =)
