One of my favorite cookies from childhood (and still today) was not a chocolate covered, cream filled anything. It was Pecan Sandies cookies- a rich and lightly sweetened cookie with a little crunch from crushed pecans. Maybe it was because they were the “grown ups cookies” and I was supposed to be eating the ones in the jar not the ones hidden on the top of the fridge. Maybe it was that delicious flavor, or just a combination of both that made them so good.
I added pecans to my favorite simple shortbread recipe and found that it was very much like the flavor that I remembered. Only they are better because they are richer, fresher, and you can control the quality of your ingredients. There are only 5 simple and easy to pronounce ingredients in these Pecan Shortbread Cookies.
Pecan Shortbread Cookies
Ingredients:
- 2 sticks of butter, softened
- 1 cup brown sugar
- 4 cups all purpose flour
- 1 cup finally diced pecans
- 1 tsp. vanilla
Directions:
- Preheat oven to 350.
- Line baking sheet with parchment paper or a silpat mat.
- Whip softened butter in stand or hand mixer until fluffy.
- Mix in brown sugar and vanilla to combine well.
- Add flour, 1 cup at a time until thoroughly mixed.
- Stir in pecans.
- Flour counter or work surface lightly.
- Press dough out to about 1/3″ thickness, you can use a rolling pins or just press with your hands.
- Cut out in any shape you desire, transfer to baking sheet.
- Bake for 9-12 minutes until edges are golden brown.
- Store in an airtight container.
