Gluten-free Chocolate Chocolate Chip Cookies Recipe

These Gluten-Free Double Chocolate Chip Cookies are a family favorite. I have many great memories of making them with my children. Lately my daughter has taken over the recipe. It started when she used this recipe to make a Gluten-Free Double Chocolate Pizooki for Mother’s Day. Ever since then, when she needs a recipe for an event she pulls this one out. The cookies are delicious and are welcome where ever she brings them, even by the people who can eat gluten.

Ingredients
  • 1 cup of butter, softened, but not melted (you can use df margarine or coconut oil to make this dairy free)
  • ¾ cup brown sugar, packed
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1¼ cup rice flour
  • ¾ cup tapioca flour
  • ¼ cup potato starch
  • 1 teaspoon guar gum
  • ⅓ cup cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups chocolate chips (use can use dairy-free if needed)
Directions
  1. Preheat oven to 375 degrees
  2. In a medium bowl, mix together flour, cocoa, salt, and baking soda.
  3. In a large bowl, cream butter and sugars. Add eggs and beat. Stir in vanilla. Add dry ingredients and mix well. Stir in chocolate chips.
  4. Dropped by tablespoon full onto a greased cookie sheet. Bake at 375 degrees for 10 minutes.
  5. Place on a cooling rack to cool.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
