10 Awesome Eggplant Recipes, including a twist on eggplant Parmesan, grilled eggplant, eggplant lasagna and how to freeze eggplant.

Eggplants are interesting to eat. They can take the place of meats in many dishes and they are, in my opinion, very beautiful to look at and grow. If you have never tried an eggplant, you may very well be missing out on some good eats. Eggplants taste like a squash with a mild cucumber taste. They are usually a squash that even “squash haters” can like if you prepare them right. Here are some suggestion on some awesome eggplant recipes as well as how to best store eggplant in the freezer.

How to Freeze Eggplant

Choose the best eggplants to begin with. You want the typical dark purple variety as they will hold up better to the freezing temperatures. Also, pick an eggplant that is mature yet firm. To start the freezing process, wash and peel the eggplant and then slice it. Blanching the eggplant is best as it will hold in it’s peak flavor better for future recipes. After you blanch it, drain well and place in zipper style bags or vacuum seal bags. Eggplant will stay good frozen for up to one year, but is best eaten within 6-8 months.

I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
