This homemade Blackberry Cobbler recipe is easy and delicious!

I make a lot of berry cobblers and fruit crips because they are quick and easy to make. And since I’m using fruit, I tell myself that they are healthier than other desserts.

This easy blackberry cobbler recipe uses fresh blackberries. I sprinkle sugar, cornstarch, and cinnamon over the blackberries while I am making the topping, and while the berries are sitting they form a syrup.

The cobbler topping is made from scratch, but that doesn’t mean it is any more difficult than using Bisquick. I use a pastry cutter to mix the cold butter into the flour mixture. If you don’t have a pastry cutter, you can use two butter knives to cut the butter into the flour mixture. I know you may be tempted to use softened butter, but using cold butter creates a more tender and fluffy topping.

Blackberry Cobbler Recipe

I love adding cinnamon to both the blackberries and the cobbler topping, however, you can leave it out if you don’t like cinnamon.

Filling Ingredients:

  • 4 cups blackberries
  • 1/2 cup sugar
  • 4 teaspoons cornstarch
  • 1/4 cup water
  • 1 teaspoon cinnamon (optional)

Topping Ingredients:

  • 1 cup all-purpose flour (or Gluten-Free flour.)
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 3 Tablespoons butter (or dairy-free substitute)
  • 1 egg, beaten
  • 3 tablespoons milk (or dairy-free substitute)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon (optional)

Directions:

  1. Add the blueberries, sugar, water, cornstarch, and cinnamon to a medium bowl. Stir to combine. Let them sit while you mix the topping ingredients.
  2. Mix flour, sugar, and baking powder together.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. In a small bowl combine egg, milk, and vanilla.
  5. Add to flour mixture, stirring just to moisten.
  6. Pour the filling into an 8×8 baking dish. blackberries sprinkled with sugar sugar in an 8x8 dish
  7. Spoon the topping onto the filling. The topping will not be perfectly spread out over the top but the spoonfuls will mostly cook together in the oven. cobbler dough spooned on top of blackberries
  8. Bake at 400 degrees for 20 – 25 minutes or until an inserted toothpick comes out clean.
  9. Serve warm or cool.

    My wife and I did the same thing to a peach cobbler last week. The only difference (aside from the fruit) was that she had no problem eating the last piece. I've not tried a blackberry one but your recipe made me crave it.
