My kids will eat anything in chicken nugget form! Since I am not a short order cook and only make 1 thing for the whole family, I needed some kid friendly and grown up friendly homemade chicken nuggets. One of my favorite recipes is Chicken Parmesan but it can be a bit involved and I don’t always have the time. Combine the two- nuggets and chicken Parmesan and you have delicious Chicken Parmesan Bites that everyone will devour. The combination of bread crumbs and Parmesan gives a lovely crunch, even though they are baked and not fried!
Chicken Parmesan Bites
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup grated Parmesan cheese
- 3/4 cup Italian breadcrumbs
- 1 tsp. parsley
- 1 tsp. garlic salt
- 1/2 tsp. pepper
- 1 egg
- 2 T. milk
- 1/2 cup flour
- marinara for dipping
Directions:
- Preheat oven to 400 degrees.
- Cut chicken breasts into small bite sized pieces, approximately 1″ x 1″.
- In a shallow dish combine bread crumbs, Parmesan cheese, parsley, garlic salt, and pepper.
- In a second dish whisk together egg and milk.
- Add flour to a third shallow dish.
- Coat chicken pieces in the following order: Flour, milk and egg mixture, then the breadcrumb mixture.
- Place on a baking sheet lined with aluminum foil or a silpat mat.
- Bake for 20 minutes or until golden brown.
- Serve with marinara to finish off the Chicken Parmesan flavor!
