We eat a lot of chicken in our house and we are always experimenting with new Chicken Recipes that are easy, healthy, and delicious. This recipe is for Lemon Pepper Poached Chicken. Have you ever poached chicken before? Not all that long ago, while searching for chicken recipes, I came across a recipe for a balsamic poached chicken (which I’ve since adapted and have a recipe and method I love). I just could not believe how easy poaching chicken was. It’s fast too! The chicken is so flavorful and extremely juicy. I recently decided to play around with some other flavors for poaching chicken and came up with this!
Lemon Pepper Poached Chicken
Ingredients:
- 1 pound of boneless chicken pieces, trimmed
- 1 1/2 – 2 cups chicken broth
- 1/4 cup lemon juice
- 1 tbsp garlic infused vinegar
- 2 tsp lemon pepper
- sea salt to taste
- 2-3 whole lemons
Instructions:
Generously sprinkle both sides of chicken pieces with lemon pepper and sea salt. Place chicken in the bottom of a heavy skillet.
Add lemon juice & vinegar to the chicken first, then add enough chicken broth to completely cover the chicken in liquid.
Slice the lemons into 1/4″ slices and lay over top of chicken pieces.
Cover the chicken and bring to a boil over medium/high heat.
Once the liquid begins to boil, reduce heat and simmer for 2 minutes.
Remove from heat and let set for 15-20 minutes without removing the lid.
Discard the lemons from the top of the chicken. Serve chicken over roasted veggies and rice! I also added a few slices of fresh lemon for extra flavor.
