- 1 tablespoon olive oil
- 3 cups cauliflower rice (How to Rice Cauliflower)
- ½ cup chopped cilantro
- Juice of one lime
- Salt and pepper, to taste
Instructions:
- Heat oil in a large skillet over medium heat.
- Wash and rough chop cilantro.
- Add the cauliflower and cilantro to the pan. Saute the cauliflower rice and the cilantro for 4-5 minutes.
- Add the lime juice to the rice, tossing to thoroughly coat the rice. Cook for an additional 3-4 minutes, or until tender.
