I love a chicken salad stuffed with as much yummy goodness as it can handle: sweet, tart, crunchy, creamy.. mmmm. Cranberry Walnut Rotisserie Chicken Salad
Ingredients:
- 2 cups shredded or chopped chicken
- 1/2 cup mayonnaise
- 2 tsp. white wine vinegar
- 1 celery stalk,diced fine
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 1/2 tsp. parsley
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Directions:
After pulling my chicken meat off my rotisserie chicken I like to chop it fairly small.
Combine all ingredients well in a bowl.
Place in refrigerator for at least an hour- it just tastes better cold and the flavors all combine much better when it hangs out in the fridge for a bit.

Ingredients
- 2 cups shredded or chopped chicken
- 1/2 cup mayonnaise

- 1 celery stalk diced fine
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 1/2 tsp. parsley
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Instructions
- Pull the chicken meat off my rotisserie chicken and chop it into small pieces.
- Place all of the ingredients. Combine all the ingredients until thoroughly mixed.
- Place the chicken salad in the refrigerator for at least an hour before serving.
