My oldest son is lactose intolerant. He is also the one who likes milk products more than any of the rest of us. Go figure! I try really hard to find dairy-free milk products that he can safely enjoy. I do buy some dairy-free and lactose-free products at the store, but I am always on the look out for delicious dairy-free milk recipes that I can make at home.
Store-bought dairy-free products can be quite pricey, so I save money by making some dairy-free milk and dairy products at home. Almond milk is my favorite dairy-free milk to use when baking. It has a little thicker consistency that matches the consistency of whole milk a little better than rice milk. Its flavor is easily hidden when used in recipes that already have a strong flavor like German Chocolate Cake.
When I am making something that has a milder flavor, I will use rice milk because its mild flavor is easier to disguise in the finished product.
I have mentioned disguising the flavor of dairy-free milk, but that isn’t because dairy-free milk tastes bad – its just a little different. And I don’t want it to change the feel or taste of our favorite baked goods. However, we all enjoy drinking dairy-free milk straight, especially almond milk.
