Looking for a quick and easy meal? This healthy vegetable stir fry recipe is delicious and comes together in minutes! Vegetable Stir Fry is one of my go-to meals. I enjoy making vegetable stir fry because you can easily adapt it to whatever vegetables you have on hand. It is perfect for a quick lunch or an easy dinner.

Time-saving tip: Cook extra rice to use in your next stir fry.

Prep-Ahead Tip: You can also chop fresh vegetables ahead of time and store them in the refrigerator for 2- 3 days.

Easy Vegetable Stir Fry Recipe

Ingredients:

  • 3 cups cooked rice
  • 1 cup fresh or frozen broccoli, chopped
  • 3 carrots, diced
  • 3 tablespoons olive oil
  • 1 cup sweet corn
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ cup soy sauce
  • 1 teaspoon honey

Directions:

1. If you don’t have leftover rice, cook 1 cup of rice according to package directions.

2.  Cut broccoli into bite sized pieces. Peel and cut carrots into thin slices.

3.  Stir-fry broccoli and carrots in olive oil and garlic powder for 4-5 minutes.

4.  Stir in rice, salt, corn, soy sauce, and honey. Cook until heated through.

    We love fried rice and we usually make it with leftover meat. This would be a nice change for a meatless meal.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
