This easy Instant Pot Mashed Potatoes recipe does not require draining. You can make the mashed potatoes in the Instant Pot from start to finish.

The fastest way to make a large batch of mashed potatoes is to cook them in the Instant Pot. Even better, since you cook Instant Pot Mashed Potatoes in vegetable broth, you don’t have to drain the liquid. Instead, you mash the potatoes in the Instant Pot.

You can use the Instant Pot to keep the mashed potatoes warm until serving time. You can even serve your mashed potatoes from the Instant Pot if you want which means you don’t have to wash a serving bowl. Fast, easy, fewer dishes, and leftover mashed potatoes. What’s not to love about this new way to cook mashed potatoes?!?

Dairy-Free Mashed Potatoes: If you have someone in your family that needs to avoid dairy, substitute dairy-free margarine for the butter. And replace the Half and Half with another 1/2 cup of vegetable broth.

Instant Pot Mashed Potatoes Recipe

This is the fastest way to make mashed potatoes! Use these directions on how to make mashed potatoes in an Instant Pot.

Prep-Ahead Tip: You can peel and cut potatoes a day or two days in advance. Place the cut potatoes in a bowl covered with water, cover, and refrigerate until you are ready to make mashed potatoes.

Ingredients:

  • 1 cup vegetable broth
  • 5 pounds potatoes, washed, peeled, and cut up
  • 8 tablespoons butter
  • 1/2 cup Half and Half + more if needed
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse ground pepper

Directions:

1. Add the vegetable broth to the Instant Pot. Then add the cut-up potato pieces.

2. Seal the lid and turn the valve to “sealed”. Select the “high-pressure cooker” button or the “manual” button. Ensure the high-pressure feature is lit. Then set the timer to 10 minutes.

3. When your Instant Pothas stopped cooking, use a potholder to open the valve to quickly release the steam. Ensure all steam has been released and then carefully remove the lid.

4. Use a potato masher to mash your potatoes.

5. Add the butter, half and half, salt, and pepper to the potatoes. Stir until the ingredients are fully incorporated.

Set the Instant Pot to warm and keep the mashed potatoes in the pot to keep them warm until you are ready to serve dinner. You can serve the mashed potatoes directly from the Instant Pot or transfer them to a bowl right before dinner. You may want to add a little more Half and Half to the potatoes before serving.

I like to add a pat of butter and sprinkle some parsley over the mashed potatoes after I have transferred them to a bowl.
