Kid-Friendly Menu Plan with Recipes to Use Up Leftovers

Between holidays, travel, and general summer laziness our schedule has gotten way off. It is time for me to bring order back to my household and I am starting with a menu plan. I have filled this menu plan with my kids’ favorite recipes in order to encourage compliance with my plan to establish order.

Many of my kids’ favorite recipes are some of what they call the “miracle leftover recipes”. These are the recipes where I create something entirely different from the leftovers like when I use spaghetti sauce and baked beans in chili.

Kid-Friendly Menu Plan with Recipes to Use Up Leftovers

Monday – Mushroom and Spinach Quesadillas, Rice and Black Beans.

Tuesday – Slow Cooker Pork Roast, Herb Roasted New Potatoes, and Green Beans with Garlic.

Wednesday– Pasta Shells with Spaghetti Sauce. Serve with a Garden Salad.

Thursday –Use leftover pork roast to make Crock Pot Pulled Pork, Baked Beans, and a Garden Salad

Friday – Make Your Own Pizza Night using my gluten-free pizza dough recipe and my easy pizza sauce. Serve with Mojito Fruit Salad and Nutty Broccoli Salad.

Saturday – Use leftover spaghetti sauce, baked beans,  and black beans to make Miracle Leftover Chili. Serve over leftover rice, with a garden salad on the side.

Sunday – Hummus Crusted Salmon, Peas with Basil, and Glazed Carrots.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
