When my kids were young, they loved spaghetti night. It was an easy meal to put together, but we often had leftovers. Rather than waste good food, I turned it into other meals that were just as tasty — and sometimes better — than the first time. In fact, that idea became the premise for this blog.
This casserole is based on that same premise. It’s a good dinner idea that prevents food from getting pushed to the back of the fridge and forgotten. The cheese adds richness, the eggs bind everything together, and baking it gives you those crispy edges and a golden top that make it feel and taste like a completely new dish. Leftover Spaghetti Casserole Substitutions
Spaghetti sauce: Sometimes you have more leftover noodles than sauce. If you find yourself in that situation, here is my recipe for Easy Homemade Spaghetti Sauce that uses canned tomato sauce and spices. It comes together quickly if you find you need a little bit more sauce than you have.
Spaghetti Noodles: You can use any pasta you wish or a combination of leftover pasta noodles that you have on hand.
Leftover Spaghetti Casserole Recipe
This baked Leftover Spaghetti Bake is an easy and delicious family dinner mixed with fresh-from-the-oven taste that’s even better than the original dish.
Ingredients
- 4 eggs
- ¼ cup milk
- ½ cup grated Parmesan cheese
- 8 cups leftover spaghetti with sauce
- 2 cups shredded sharp cheddar cheese, divided

Tools
- Covered 9″ x 13″ casserole dish
Directions
1. Preheat the oven to 350 degrees. Prepare a 9″ x 13″ casserole dish by spraying it with nonstick cooking spray.
2. In a large mixing bowl, whisk together the eggs and milk until completely mixed. Stir in the grated Parmesan cheese.

3. Add the spaghetti to the bowl and toss in the egg mixture until it is well blended. Add 1 cup of the cheddar cheese and toss until it is mixed.

4. Transfer the spaghetti to the prepared baking dish.

5. Bake in the oven, covered, for 30 to 40 minutes or until the casserole is cooked through.
6. Remove the cover and top the casserole with the remaining cheese. Return the uncovered casserole dish to the oven and bake for an additional 5 to 10 minutes or until the cheese has melted.

Store in a sealed container in the refrigerator for up to 5 days.
How to Freeze Leftovers
Allow the spaghetti casserole to cool completely, then store it in a freezer-safe container in the freezer for up to 3 months.
How to Thaw Leftover Spaghetti Casserole
Allow the frozen casserole to thaw overnight in the refrigerator.
How to Reheat Leftover Spaghetti Casserole
You can reheat individual portions in the microwave for 1-2 minutes, stirring halfway through. To reheat larger portions, place the casserole in an oven-safe dish and bake at 350 degrees for 10-15 minutes or until heated through.
