Meatless Cheese Stuffed Shells

Meatless Cheese Stuffed Shells- Looking for meatless dinner ideas? This stuffed shells recipe is a simple and hearty meal loaded with spinach and cheese.

Meatless Cheese Stuffed Shells

Pasta is always a favorite in our house, and these Meatless Cheese Stuffed Shells are definitely a great choice.  With the addition of spinach, these are a great hearty meal that everyone enjoys even without the traditional meat sauces that most pasta dishes include.

I love simple meals, and this recipe is easy to throw together.  All you have to do is mix together a few ingredients, stuff inside shells, and top with your favorite brand of pasta sauce or even a tasty homemade pasta sauce. Top with some cheese and watch them cook up in no time!

Meatless Cheese Stuffed Shells

Ingredients: 

  • 1 box of jumbo shells
  • 1 8 ounce container of ricotta cheese
  • 1 8 ounce container of small curd cottage cheese
  • 1 large egg
  • 2 cup shredded mozzarella, divided
  • 10 ounce package of frozen spinach, cooked according to package directions and drained
  • 1 24 ounce jar of pasta sauce
  • fresh basil (optional)
  • salt and pepper to taste
 Directions:
  1.  Preheat the oven to 350 degrees.
  2. Cook the jumbo shells according to the package directions, about 12-15 minutes in boiling water.
  3. Spread about 1 – 1 1/2 cups of pasta sauce evenly on the bottom of a 9×13 baking dish.
  4. In a large bowl combine the egg, ricotta cheese, cottage cheese, 1 cup of mozzarella cheese and cooked spinach, mixing well. Add salt and pepper to taste.
  5. Remove the jumbo shells from the stove, drain and rinse with cool water.
  6. Stuff the shells one at a time and place in the 9×13 baking dish. Repeat with all shells.
  7. Top the shells with the leftover pasta sauce and shredded cheese.
  8. Bake 25-30 minutes or until heated through.
  9. Garnish with fresh basil (optional).

I love being able to give my family a great hearty meal they love like these Meatless Cheese Stuffed Shells. Even if I use a jar of pasta sauce instead of homemade, it is still a great option that everyone enjoys.
