This mimosa fruit salad recipe uses champagne and orange juice in the dressing to drizzle over the fruit.

I love the idea of a weekend brunch much more than I like the idea of getting up on the weekend to create one. This fruit salad makes a festive addition to any brunch and my guests don’t have to know that I made it the day before, so I could sleep in.

This fruit salad recipe needs to be chilled for at least 2 hours but can be made as far as a day in advance. While the salad is chilling the flavors from the homemade mimosa syrup will infuse the fruit with the rich flavors of orange juice and champagne.

Not only is this fruit salad a delicious brunch recipe, but it is also the perfect side dish for a bridal shower!

Mimosa Fruit Salad Recipe

Serves 8

Ingredients:

  • 1 cup orange juice
  • ¾ cup champagne
  • 2 tablespoons honey
  • Zest of one orange
  • 6 cups of watermelon balls
  • 2 cups cantaloupe balls
  • 2 cups grapes (you can use red, green, or both)
  • 1 cup pineapple cubes
  • 1 cup fresh clementine or mandarin orange slices

Directions:

  1. Combine orange juice, champagne, honey, and orange zest in a small pot. Heat it over medium-high heat until it reaches a boil. Then lower the heat and allow it to simmer until it is reduced to a ¾ cup of liquid, about 20 minutes. Then remove from the stove and allow to cool.
  2. While the Mimosa syrup is simmering, prepare your fruit.
  3. Add the watermelon, cantaloupe, grapes, pineapple, and orange slices to a large bowl. When the syrup has reached room temperature, drizzle it over the fruit. Toss to coat the fruit.
  4. Cover the bowl and refrigerate for at least 2 hours before serving.

For smaller parties, I like to pre-portion the Mimosa fruit salad and serve it in my large crystal water goblets. You can also serve it in classic champagne glasses or small bowls. For larger gatherings, I add it to the buffet and have guests serve themselves.
