Peanut Butter Trail Mix Refrigerator Oatmeal

This Peanut Butter Trail Mix Refrigerator Oatmeal is an easy and delicious prep-ahead breakfast for busy mornings.

Peanut Butter Trail Mix Refrigerator Oatmeal Recipe- This overnight oatmeal is an easy and dairy-free prep-ahead breakfast. It's so good it tastes like a dessert!

I am not a morning person. If I am going to choose between getting up to make breakfast and hitting snooze several more times, more sleep is always going to win. So I usually scan my pantry for anything I can eat as I am running out the door. I love overnight oatmeal because I can prepare it in the evening when I actually want to be awake, and it will be there waiting for me when I am rushing to work in the morning.

This Peanut Butter Trail Mix Refrigerator Oatmeal is one of my absolute favorite recipes. I think the combination of sweetened vanilla almond milk and peanut butter tastes like a peanut butter shake, but much healthier! I added mini-chocolate chips, sunflower seeds, and dried cranberries, but you can add just about anything you would normally put in trail mix.

Peanut Butter Trail Mix Refrigerator Oatmeal

Ingredients:

  • 1/2 cup old fashioned rolled oats (use gluten-free rolled oats to make it gluten free)
  • 2/3 cup sweetened vanilla almond milk
  • 2 tablespoons of peanut butter
  • 1 tablespoon of mini chocolate chips
  • 1 tablespoon of dried cranberries
  • 1 tablespoon of raw unsalted sunflower seeds

Modifications: If you use regular, unsweetened almond milk or regular milk, add 1 tsp of honey and 1/4 tsp of vanilla.

1. Add the rolled oats to a mason jar or another lidded container.

2. Add the vanilla almond milk and peanut butter. Stir until thoroughly mixed.

3. Add mini chocolate chips, cranberries, and sunflower seeds. Stir until thoroughly mixed and seal the container.

4. Refrigerate overnight or until the liquid is absorbed and oats are soft (6-8 hours). Serve cold.
