This recipe is not your traditional fresh salsa but is just as delicious and flavorful. The mango and pineapple offer just the right amount of sweet to offset the heat of the jalapeno peppers. The homemade baked corn tortilla chips are super easy to make and taste so much better than store bought options.
Pineapple Mango Salsa Recipe
Salsa Ingredients:
- 3 medium mangoes
- 1/4 of a medium pineapple
- 1/2 medium red onion
- 1 jalapeno pepper
- 1/2 red bell pepper
- 1/2 green bell pepper
- 5-6 sprigs of cilantro
- fresh lemon juice
- garlic salt
- cumin
- red pepper flakes
- sea salt
Instructions:
Peel and dice the mangoes and pineapple. Combine them in a medium bowl and set aside.
Dice the peppers, onion, and cilantro and add to the mango and pineapple mixture.
Add fresh lemon juice, garlic salt, cumin, red pepper flakes, and sea salt to taste. Stir well to blend flavors.
Allow salsa to chill for 2-3 hours before serving for more intense flavors.
This salsa is delicious served with homemade corn tortilla chips. Homemade tortilla chips have a slightly sweeter taste than store bought which is perfect for this salsa.
Chips Ingredients:
- 1 package soft corn tortillas
- 1/4 cup olive oil
- sea salt
Instructions:
Preheat oven to 375 degrees.
Lightly coat each side of all tortillas with olive oil.
Cut the tortillas into triangular pieces and transfer to a baking sheet.
Bake in preheated oven for 6-8 minutes, flip and bake for an additional 3-5 minutes.
Remove chips from oven and allow them to cool for a 5 minutes.
Transfer the chips to a serving bowl and add sea salt to taste.
Serve warm or cool.
Baked corn tortilla chips can easily be gluten-free by choosing a gluten-free tortilla. The salsa is also gluten free. This combo makes a healthy and delicious snack or addition to any summer meal. Pineapple Mango Salsa is also a great topping for fish or chicken!

I just made this and it was yummy! ** I didn’t have lemon, so I used lime juice instead. (I also tossed in some fresh chopped mint from my garden.) Thanks for a great idea. We are going to serve the rest of it (ate so much with chips already) with some grilled halibut over the weekend.
